Place the flour, sugar, and salt for the shortcrust pastry into the food processor. Mix, then add the cold butter in small pieces a little at a time, followed by the beaten egg; if the mixture is too dry, add a tablespoon of cold water.

Form the shortcrust pastry into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for 1 hour.
Heat the butter for the filling in a skillet; meanwhile, dice the apples and place them in a bowl with the lemon juice and sugar.

Pour the apple mixture into the pan with the butter and cook for 2 minutes, then cover and cook over low heat for another 7 minutes.

Drain the juice from the apples and simmer it on the stove with half of the apples for about ten minutes.

Add the nutmeg and mix the filling back together with the reduced juice.

Preheat the oven to 180°C, divide the shortcrust pastry in half, and roll out the first half into a 20–22 cm cake pan, pricking the bottom with a fork.

Pour the apple filling into the crust.

Cover with the other half of the rolled-out shortcrust pastry and trim off the excess dough, sealing the edges.

Brush the surface with egg, make decorative slits, and bake for 50 minutes on the bottom third of the oven.
