School has just started, and the moment all kids look forward to is recess—which is why a delicious and healthy snack like cookies filled with ricotta and chocolate chips is perfect to pack in the little ones’ backpacks…and in your work bag for a snack :) I really like them, and they’re very easy to make.

Ricotta and Chocolate Cookies
Ingredients
- 300 g 00 flour
- 100 g sugar
- 4 eggs (2 egg yolks and 2 whole eggs)
- 100 g butter
- 1 packet of yeast
- 400 g ricotta
- 100 g dark chocolate or chocolate chips
- 1 pinch of salt
Directions
Place the flour in a bowl, then add the sugar, baking powder, butter cut into small pieces, and salt. Make a well in the center and add the two egg yolks and the two whole eggs. Knead until the dough is smooth, shape it into a ball, and wrap it in plastic wrap. Let it rest in the refrigerator for 30 minutes.

Chop the chocolate or prepare the chocolate chips. In a bowl, mash the ricotta with a fork, add the chocolate, and mix well.

Roll out the dough and cut out circles using a round cookie cutter or a glass.

Place a teaspoon of ricotta in the center of each disc.

Close the cookie by folding the circle in half to form what looks like a small panzerotto.

Place the cookies on a baking sheet lined with parchment paper and bake in a conventional oven at 180°C for about 15 minutes.
