Ingredients

  • 115 g butter
  • 90 g brown sugar
  • 1 egg
  • 1 packet of vanilla extract
  • 1 packet of yeast
  • 1 tablespoon milk
  • 100 g flour
  • 150 g oats
  • 1 pinch of salt
  • 100 g white chocolate

Directions

  1. Cream the butter and brown sugar together until light and fluffy.

  2. Add the egg beaten with salt and mix it into the previous mixture.

  3. Add the flour, vanilla extract, baking powder, and a tablespoon of milk to the dough.

  4. Meanwhile, chop the white chocolate with a knife until it’s broken into small pieces that aren’t too large. Add both the oats and the white chocolate to the mixture and stir with a wooden spoon.

  5. Using two spoons, shape the dough into balls and flatten them on a baking sheet lined with parchment paper.

  6. Bake at 180°C for 12 minutes, and as soon as they come out of the oven, transfer the cookies to a cooling rack to cool.

These oatmeal and white chocolate cookies are great for both a snack and breakfast, and they’re a favorite among many of my friends.

I’ve tried making them with many different brands of oats, but the one I found works best is the kind used for porridge; I use the Quaker brand shown in the photo below.
