Ingredients

  • 125 g butter (for Halloween cookies)
  • 125 g sugar (for Halloween cookies)
  • 1 egg (for Halloween cookies)
  • 1 packet of baking powder (for Halloween cookies)
  • 1 packet of vanilla extract (for Halloween cookies)
  • 250 g flour (for Halloween cookies)
  • Nutella or jam, to taste (for filling the cookies)

Directions

  1. In a bowl, cream the butter and sugar until smooth.

  2. Combine the egg and vanilla extract and continue beating.

  3. Replace the beaters with a dough hook, or continue by hand, and add the sifted flour.

  4. Form a smooth ball, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes (I let it rest for a couple of hours).

  5. Sprinkle flour on a pastry board and use a rolling pin to roll out the dough very thinly, since our cookies will consist of two cookies stacked on top of each other with a filling in between. Cut out the cookies using typical Halloween cookie cutters. I used pumpkin and skull shapes with cookie cutters featuring eyes and a mouth. Before baking the cookies, let them chill in the fridge for about 10 minutes.

  6. Bake at 180° C for 7 minutes or until golden brown.

  7. Let the cookies cool, then spread jam or Nutella on the side without the eyes and mouth, and top with the cookie that has the face on it.
