Madeleines are soft, shell-shaped French tea cakes. They’re a delight to look at and a treat to eat!

Madeleine
Ingredients
- 130 g Type 00 flour
- 130 g sugar
- 110 g butter
- 3 eggs
- 3 g yeast
- 1 packet of vanilla extract
- salt
Directions
First, beat the eggs with the sugar and salt until you have a fluffy mixture.

Add the vanilla extract and continue beating. Then sift the flour with the baking powder and add it to the mixture.

Melt the butter in a small saucepan and let it cool slightly. When it is lukewarm, slowly pour it into the mixture while continuing to stir.

Once everything is well mixed and smooth, cover the bowl with plastic wrap and let it rest in the fridge for half an hour.

Meanwhile, butter and flour a madeleine pan (this step is not necessary if you’re using a silicone mold). Fill the pan and bake in a conventional oven at 180°C for about 11–13 minutes.

Remove the madeleines from the oven and let them cool on a wire rack. Enjoy!
