Ingredients

  • 240 g Type 00 flour
  • 3 large bananas
  • 125 g white sugar
  • 30 g brown sugar
  • 1 egg
  • 60 g vegetable oil
  • 1 packet of yeast
  • salt
  • 1 teaspoon cinnamon
  • 110 g walnuts

Directions

  1. Gather two medium-sized bowls and chop the walnuts.

  2. In one of the two bowls, combine the bananas, sugar (both types), egg, oil, and salt.

  3. Let’s preheat the oven to 180°C (conventional).

  4. Mix everything together with a fork or a hand blender.

  5. In another bowl, combine the flour, cinnamon, chopped walnuts, and baking powder.

  6. Pour the contents of the bowl with the liquids (the first one) into the bowl with the solids and mix.

  7. Pour the batter into the molds: as always, to make it easier to share with others, I recommend using paper liners, and bake in the oven for 20 minutes (remember, at 180°C in a conventional oven!).

  8. Since every oven is different, keep an eye on them and be sure to do the toothpick test: if the toothpick comes out dry, the muffins are done!

Banana-walnut muffins (or banana nut muffins!) were the most popular treats during our vacation on the West Coast of the U.S. (San Francisco, the national parks, Death Valley, Las Vegas, …).

Before setting off on a long trip (the open spaces, for those who’ve never been there, are veeeery vast), we’d always stock up on provisions and water, and treat ourselves to a few sweets. The selection was vast, but in the end we always chose the banana and walnut muffins: they leave a delicious taste in your mouth,
