Ingredients

  • 400 g 00 flour (for gingerbread men)
  • 130 g butter (for gingerbread men)
  • 95 g sugar (for gingerbread men)
  • 150 g honey or honeydew (for gingerbread men)
  • 1 egg (for gingerbread men)
  • 2 teaspoons ground ginger (for gingerbread men)
  • 1/4 teaspoon nutmeg (for gingerbread men)
  • 1/2 teaspoon baking soda (for gingerbread men)
  • 1 pinch of salt (for gingerbread men)
  • 50 g powdered sugar (for decoration)
  • water, as needed (for garnish)
  • food coloring, as needed (for decoration)

Directions

  1. Let’s prepare a bowl in which to mix the sugar and butter. Beat the egg with the salt and pour it into the bowl with the mixture.

  2. While kneading, add the honey and, little by little, the sifted flour mixed with the spices (ginger, nutmeg, and baking soda).

  3. Take the dough and shape it into a ball; wrap it in plastic wrap and let it rest in the refrigerator for 1 hour.

  4. (In the meantime, you can watch a movie or the gingerbread man sketch at the bottom of the page!)

  5. After an hour, preheat the oven to 180°C (conventional) and sprinkle a little flour on the work surface to roll out the dough.

  6. Let’s cut out gingerbread men of various sizes using a special cookie cutter!

  7. Line a baking sheet with parchment paper and place the freshly cut cookies on it.

  8. Bake for about 10 minutes, then let them cool completely.

  9. Meanwhile, we’ll prepare the icing so we can decorate them.

  10. Put the powdered sugar in a small bowl and add water one teaspoon at a time until you reach a thick, creamy consistency perfect for decorating. Divide the white icing into as many small bowls as there are colors you’ve chosen. Add just one drop of food coloring to each, mix a little, transfer to piping bags, and start decorating!

  11. I chose this simple decoration, but you can get creative!

  12. Once decorated, let them rest a little longer, and they’ll be perfect to eat and share with everyone!

December is here! It’s time to start thinking about what desserts to make for our dear friends and family! For this loooong Sant’Ambreus weekend in Milan, I made gingerbread men!!! .

Gingerbread men, made perhaps even more famous by the first Shrek movie in the scene where he’s tortured by being dunked in milk (I’ll leave the clip from YouTube at the end of this post—check it out, it’s hilarious!).

By the way, they’re also great for a last-minute gift—just wrap them up, and you can show up at parties without expensive gifts but still make a great impression!
