My friend Susy had been asking me for a while for a spelt and oat plum cake because she’d tried one and really liked it.
Since I’d never done this before, I tried combining a few recipes I found online to create a new—and very tasty—one!

Beat the eggs with the sugar until the mixture is light and fluffy. Then slowly drizzle in the oil.

Mash the bananas with a fork.

Coarsely chop the rolled oats and add them to the mixture along with the bananas.

Sift the rolled oats together with the spelt flour and baking powder, and continue stirring.

Pour the mixture into the pan and sprinkle with oat flakes.

We’re ready to bake at 180° for about 40 minutes, until golden brown.
