Red Velvet Cupcakes are a classic American treat to enjoy with afternoon tea.
It’s impossible to describe their truly unique flavor—you’ll just have to try them!

INSTRUCTIONS
Cream the butter and sugar together until you have a smooth, creamy mixture.

Beat one whole egg with salt and add it to the mixture.

In a bowl, mix the flour, baking powder, and cocoa powder.

Prepare the buttermilk separately: pour the cold cream into a bowl and whip it thoroughly with a stand mixer or an electric hand mixer. After a few minutes, the solid part of the cream (butter) will separate from the liquid part (buttermilk). Press the butter through a sieve to extract all the buttermilk from it.

Add the red food coloring to the buttermilk and stir well.

Add the flour and buttermilk to the butter and sugar mixture in three batches, starting and ending with the flour.

Mix the vinegar and baking soda and pour the mixture into the batter while it’s still fizzing.

Line the baking sheet with paper cups and divide the batter among them, filling each 3/4 full.

Bake in a conventional oven at 180° C for 18–23 minutes.
Let the cupcakes cool in the pan outside the oven for 10 minutes, then remove them and let them cool completely.

FROSTING
Beat the cheese with the vanilla extract and powdered sugar.
DECORATION
Set aside one cupcake, which will be used to create the final decoration.
Put the frosting in the pastry bag and decorate the remaining cupcakes.
Finally, crumble a small piece of the undecorated cupcake that we had set aside and sprinkle some crumbs on the frosting of the remaining cupcakes.
