Ingredients

  • 100 g rolled oats
  • 160 g Type 00 flour
  • 3 eggs
  • 100 g brown sugar
  • 50 g granulated sugar
  • 70 g sunflower oil
  • 4 Golden Delicious apples
  • 1 packet of yeast
  • salt

Directions

  1. Let’s get started! I like to begin by preparing whatever I can: line a baking sheet with parchment paper or grease and flour it. With the ingredients I’ve given you, I used a 26-cm-diameter baking sheet.

  2. Using a blender or food processor, grind the rolled oats.

  3. While chopping, beat the eggs with the sugar until you have a nice, creamy mixture, then add the oil and salt while continuing to stir.

  4. Add the flakes, let them mix in a bit, and then continue by adding the flour and baking powder.

  5. Next, cut 2 apples into medium-sized cubes—not too big and not too small—and add them to the mixture.

  6. Mix everything together well and pour it into the baking dish you prepared at the beginning (you did that, right? :D)

  7. Now let’s slice the remaining two apples, preheat the oven to 180°C, and while it’s heating up, let’s decorate by arranging the slices on top of the mixture: I really like how I decorated it—a beautiful apple rose. What do you think?

  8. At this point, the cake is ready to be baked for 40 minutes in conventional mode!

  9. Let it cool before serving: keep the apple-oat cake covered after it has cooled, and you’ll see that it will stay nice and soft for a long time.

Hi, everyone!

How was your weekend? Did you have fun? Did you make the most of your free time? On Saturday, I had a lovely evening with friends, and on Sunday, I spent time with my parents!

I hope you all had a great day today. Last week, I made this cake because… um, I hadn’t gone grocery shopping yet and I had these ingredients at home… WHAT A SURPRISE! It’s almost—ALMOST—become my favorite breakfast cake! The apple-oat cake is one of those desserts that feels incredibly light on the palate—you could easily eat half of it for breakfast (um, don’t do that!) and even take it to work for an afternoon snack. TRY IT—you won’t regret it!

Oats are good for you (LINK), but as with everything, be careful not to eat too many ;).

As always, I use a stand mixer to save time, but you can easily do this by hand!
